Sweet buns with blackberry feeling

The best in this everything is I have finally tried to bake blackberry buns. Sometimes I have this vision that something is so complicated to make and time consuming or just messy. Again nothing more simple to make. I know it is a yeast dough and you have to give it some time to rise but I thing everybody has a spear moment to do that home. I always keep some dry yeast in the cardboard and the moment has arrived to use it all. 

  • 500 g all porous flour
  • 7g active dry yeast
  • 80 g sugar
  • 250 ml lukewarm milk 
  • 2 egg
  • 80 g butter
  • blackberry marmalade
  • 2 tbsp icing sugar
  1. In a small bowl mix well yeast, 2 tbsp of sugar and milk. Set aside for at least 20 min - just to activate yeasts. 
  2. In a large bowl mix together flour, melted butter, 1 egg, rest of the sugar and leaven. 
  3. Knead a dough until well combine and elastic. Leave in a bowl for about 1h covered with kitchen towel.
  4. Preheat an oven - 180°C up and down.
  5. Roll out the dough. (About 1cm thick).
  6. Using a 10 cm ring cut out even circles. 
  7. On each circle place 1 tsp of blackberry marmalade. 
  8. Form small buns by pinching edges. Close it well not to avoid marmalade migration.
  9. Arrange buns on a baking tray cover with baking paper. Leave some places in-between as the buns will rise.
  10. Brash all the buns with beaten egg.
  11. Bake 25 min until nice and golden.
  12. Take out from the oven and sprinkle with icing sugar.

How do you spend your days lately? I am the planing freak, love to have everything organised. A love to prepare a to do list even for house work or beauty routine. It really helps to plane something for following day just to get up more motivated. 

I am happy to announce that on the Balearic Island there is the light in the tunnel and after 3 weeks of lock dow, people staying home and all restrictions we might be arriving to the "everything is under control" point soon.
