Spaghetti with chicken and Pesto Rosso

Weekend is here. I have finally received my new coffee machine with cutes milk frother - now I can enjoy my perfect coffee with a view every day. Plans for today? Good diner, bottle of wine for two and relax on the balcony watching a sunset, enjoying the moment. I just listen to the weekend chill playlist while writing this few words to you - whoever is reading this. Stay positive and enjoy every single moment. Cook , eat , repeat. Today I am sharing the most simple recipe for spaghetti with Pesto Rosso - for my veggie friends without chicken. Enjoy.




Ingredients:

  • 300 g dry spaghetti 
  • 1 chicken breast
  • 1/2 cup sun dried tomatoes in oil
  • 1/3 cup olive from sun dried tomatoes jar 
  • 1/4 grated parmesan 
  • 4 tbsp pie nuts 
  • 1 garlic clove 
  • salt and peper
  • thyme springs 
  • 6 cherry tomatos

Preparation:

  1. Cook spaghetti in a salted water according to the packet instruction - best al dente.
  2. In a food procesor place sun dried tomato, olive oil, parmesan, nuts, garlic, pinch of salt and freshly grated paper. Blitz until you will get a thick paste. 
  3. Dice chicken and fry on high heat on non stick pan with one tbsp of olive oil until golden. Turn down the heat to the minimum and add all pesto. Warm it up but do not cook to avoid splitting. 
  4. Drain the spaghetti (do not rinse) and dump in the pan with chicken. Mix it well with tongs. 
  5. Serve with halved cherry tomatoes, parmezan shavings and spring of thyme.

Good news for Mallorca kids - you are all able to get outside for a bit from Sunday on. I am so happy for my nephew Maxim he was just not able to leave his house for past 6 weeks I hope you'll enjoy!! Feed some ducks please!
