No Knead Rosemary Bread

After a quarantine I might become a true baker. I always spend loads of the time in my kitchen, cooking backing and preparing food. At this time I have challenged myself to bake different kind of bread and I will share with you my best discoveries. You ask me always how do I create my recipes. Well - I do the research in Internet, I try new local things and I travel. I share and compare recipes with my family and friends. Then I focus on onces I like and I tray them. Mostly I add some extra ingredients into it to bring it to another level. I also have some old fashion recipes from family members and then I am bringing them to life. This is how I am working on this mostly. Following this I have just explained I have created artisan no knead bread with touch of rosemary. 

  • 3,5 cups all-purpose flour
  • 2 tsp kosher salt
  • 1/2 tsp active dry yeast
  • 1 1/2 cups room temperature water
  • 1 tbsp fresh chopped rosemary
  1. In a large bowl mix together flour, salt, yeast water and rosemary. It will be quite sticky but this is how it should be. Cover with a kitchen towel and leave on the kitchen counter for 12 hours to rise.
  2. Next day steps: Put the cast iron Dutch Oven into the oven and preheat to 230°C.
  3. Sprinkle the flour on the surface and remove the dough from the bowl. Shape a nice round bowl. (The dough will be sticky but do not add any extra flour.
  4. Take out hot Dutch Oven and drop a bread into it. (You might lay the bottom out just to avoid sticking.)
  5. Bake a bread covered for 30 min.
  6. Remove the cover and bake a bread for next 15 min until golden. 
  7. Turn off the oven and remove the bread from Dutch Oven onto cooling rack.
  8. Cool completely before cutting. 

Do you always follow the recipe? In baking I know it's critical but in general!? Do you follow or you more trust your palate? Do you create your own recipes or swap some ingredients? One is sure in here just because I am missing something it won't stop me from preparing my favourite dish. Some times it ends up that I recreated something good into better.
