Home made lasagne

The day is going well. Every morning routine done, lunch cooked haven't been eaten yet tho. 2 coffees checked. Photos taken, postproduction result very good. I have spoken with my sister and my mum - they always make me smile. Then have lost 3 hours on line looking for protection masks and gloves but this is nowhere to find or estimated delivery time is the end of May. Delivery is the biggest nightmare on the island - it does not work like on the mainland. Always delayed or super expensive.  No fun! Not happy bunny! :( From the next week on we will be released to have an hour walk or run. Happy to hear that - some good news in here for as on the island. In the meantime I want to share my recipie for my delish lasagne. Have a look.



Bolognese feeling

Ingredients:


  • 1 pack of dry lasagne pasta
  • 400 g minced mix meat
  • 1 onion
  • 1/2 red bell pepper
  • 1 Tbsp potato pure
  • 1 can tomatoes in juice
  • 2 garlic cloves
  • 2 small carrots
  • 100 g grated cheese (in here ementaler)
  • 2 tbsp olive oil 
  • salt and pepper
  • handful of fresh basil leafs 
  1. In the thick bottom pot brow meat on the olive oil. Add diced onion, red bell pepper, minced garlic and grated carrots. Saute on a medium heat until everything will be golden. 
  2. Incorporate tomato pure well.
  3. Add caned tomatoes, basil, salt and pepper. Cover with a lid and cook slowly for an hour.

Topping:
  • 2 tbsp butter
  • 2 tbsp all porous flour
  • 1 and 1/2 cup of milk
  • 1/2 tsp freshly ground pepper 
  • pinch of nutmeg 

Preparation:


  1. On a non stick pan melt butter. Medium heat.
  2. Add flour and mix all the time.
  3. Start adding flour constantly whisking. When the white sauce start to thicken remove from the heat. Add pepper and nutmeg. Whisk again.

Assembly:
  1. Prepare heat proof deep dish and brush it with 1 tsp of any oil.
  2. Layer lasagne sheets on the bottom of the dish, cover well with bolognese sauce then repeat.You should be able to make at least 6 same layers. 
  3. Cover the last layer of red sauce with pasta and pure white sauce all over the top. Even with a spoon. 
  4. Sprinkle grated cheese on the top and bake lasagne 45 min in the oven 200°C - up and down function.

Side salad:
  • 1/2 pack of mixed salad
  • 10 cherry tomatos
  • 1 small onion 
  • 2 tbsp cream cheese
  • 4 tbsp double cream 
  • 2 tbsp white wine vinegar
  • salt and pepper
  1. Mix all vegetables in a bowl.
  2. In a small bowl combine cream cheese, double cream, vinegar, salt and pepper. Mixed well. 
  3. You can pur the dressing all over the salad or serve on side. 


Do you already know I am big pasta lover? This is something I will never get bored with. There is so many combination, so many options and so many ideas in my head I will share it all with you soon! Stay tuned. I think the side salad for pasta is not a very common side although I think this is kind of good idea. Believe me is very refreshing and goes well with the whole meal.
